NV Ca’del Bosco Franciacorta Cuve Prestige Edizione 45

Franciacorta is considered the Champagne of Italy, an Extra Brut blend of 82% Chardonnay, 16.5% Pinot Nero and 1.5% Pinot Bianco, all certified organic. 68% of the blend is from 2020, 29% from 2019 and a mere 3% from 2018.

The process of making Franciacorta to Ca’del Bosco standards is long and extensive. The grapes are hand-picked, sorted and chilled. The bunches are run through a ‘berry spa’ that soaks and dries the grapes before pressing. The grapes ferment for 7 months in temperature controlled steel tanks. The wines are aged on lees for a minimum of 2 years (Edizione 45 had 25 months) before disgorgement. Each bottle is marked with a unique identifier.
